    Two questions:

    The Buttermilk Chicken - can it be made with skinless chicken portions (no-one in my family eat chicken skins). I was thinking of skinless chicken thighs as they are not as dry as breast fillets.

    Second question - what on earth is sausage balls. I know of meat balls (using ground beef).

    Some great recipes that I am keen to try

      It's like that sausage meat that's used in sausage rolls.

      and the chicken would be ok, it just wouldn't get that crispy skin look.

        Dont owrry i havent heard of sausage balls either!!

        Tonight i made "dirty rice"

        turkey sausage, bell peppers of all colors, banana pepper from garden instead of jalepeno, onion, garlic, kidney beans, brown rice all mixed together with a tad of chicken broth, chili powder, salt, pepper, red pepper flakes, paprika, and parsley. Havent tried it yet still on the stove but it smells and looks good.

          hehe..the sausage balls is essentially Bisquik, cheese, and sausage....mixed together, formed into balls like meatballs, put on a pan and baked. Some people add other things, but the basic is 3 ingredient.

              Oh, and yep FearNot, would work fine without the skin. But I'd def suggest using the thighs if you do that cuz they'll retain their moisture better. I love the crispy skin, so with the person in my house who doesnt, I eat my skin, and hers..roflol. BUt if no one in your family likes it, it's fine to leave it off.

                    lol - nah - KFC skin goes straight to the bin in my house so hardly buy KFC chicken.

                    And great re using the skinless thighs instead.

                          giggles. I love the skin too. Muffin tops and chicken skin....Ironic, given that lots of chicken skin is how you get a muffin top! :P (Experience speaking! lol)

                              So, I've never done this before. But I'm roasting vegetables tonight. Just simple. Oil and seasonings. One pan with sliced zucchini and yellow squash, another pan with quartered tomatoes. In my mind, they would be better on shish kabob sticks with some chunky onions and mushrooms included. But they all needed to be used asap, so I'm just going with this for now. Closest I've come, is backed tomato halves, but that's years ago! Hope they'll be tasty...

                                Roasting is my favorite way to do vegetables Catie. I really love when they get a bit caramelized! And I usually go simple as well. Olive oil, and a blend of salt, pepper, and garlic powder.
