    Emily...yes, itʻs mild curry powder and gives it a bit of a kick. My kids love that recipe!
    Sammi...the fried oreos are something I will try soon.....Mmmmm...all the recipes are sounding sooo good!

      NC Lexington Style Barbeque and Barbeque Slaw
      1 (5 lb) pork shoulder roast or boston butt
      1 1/2 cups vinegar

      • Place thawed meat into crock pot and pour vinegar on top.
      • Cook on low for 10 to 12 hours or cook on high for 6 hours
      • Take meat out of crock pot and and use two forks to pull apart meat. If
      you want it finer, chop it after pulling it apart
      • Place meat back into crock pot and pour BBQ Dip Sauce over it and let it
      cook for 1 more hour

      Lexington Style BBQ Dip (Sauce)
      • 2 cups cider vinegar (or 2 cups reserved sauce from meat)
      • 1 tablespoon sea salt
      • 1 tablespoon cayene pepper
      • 1 tablespoon red pepper flakes
      • 2 tablespoons white sugar
      • 1/4 cup dark brown sugar
      • 1 teaspoon ground black pepper
      • 1/2 cup ketchup

      Lexington Style BBQ Slaw (red slaw)
      • Make another batch of BBQ Dip Sauce
      • Finely chop a whole cabbage
      • Mix sauce with slaw
      • Refrigerate for an hour

        Lemon Garlic Cream Fettuccine

        Not so healthy but oh so good

        Garnish Ingredients:
        2 tsp grated lemon zest
        2 tsp minced parsley
        1/4 cup grated parmesan or romano cheese

        Ingredients:

        8 ounces fettuccini
        1/4 cup butter
        1 small onion, chopped
        2 minced garlic cloves
        1 tsp lemon zest
        1/2 cup half and half or heavy cream
        1/4 tsp salt
        1/8 tsp pepper
        4 oz cream cheese, cubed
        2 Tbsp lemon juice
        2 plum tomatoes, seeded and chopped
        2 tsp minced fresh parsley
        2 cups fresh baby spinach, chopped

        1. In a small bowl, mix garnish ingredients and set aside.
        2. Cook fettuccine according to package directions. Drain. Save 1/2 cup of pasta water, in case you need it to thin the sauce later (If using fresh or refrigerated pasta, this can be done while the sauce is cooking, because it cooks so quickly).
        3. In a large skillet, saute onions in butter until tender. Add garlic and lemon zest. Cook about one minute longer. Stir in cream, salt and pepper. Whisk in cream cheese until melted. Add spinach and stir just until wilted.
        4. Remove from heat and let cool just for a minute or two.
        5. Stir in lemon juice.
        6. Add pasta, tomatoes, and parsley and toss to combine. (If sauce seems too thick, add a little of the reserved pasta water until it's the consistency you want.

        Serve immediately garnished with lemon zest/cheese/parsley mixture if desired.

          Slow Cooker Turkey Tamale Pie

          --1 pound ground turkey (can use beef or chicken, whatever you like)
          --1 teaspoon ground cumin
          --1 teaspoon chili powder
          --1/2 teaspoon salt
          --1/4 teaspoon pepper
          --1 can (15 ounces) black beans, rinsed and drained
          --1 can (14-1/2 ounces) diced tomatoes, undrained
          --1 can (11 ounces) whole kernel corn, drained
          --1 can (10 ounces) enchilada sauce
          --2 green onions, chopped (or 1/2 tsp onion powder)
          --1/4 cup minced fresh cilantro (optional)
          --1 package (8-1/2 ounces) corn bread/muffin mix
          --2 eggs, lightly beaten
          --1 cup (4 ounces) shredded Mexican cheese blend
          --Optional toppings: sour cream, salsa and minced fresh cilantro

          Directions:

          1. In a large skillet, cook chicken over medium heat 6-8 minutes or until no longer pink, breaking into crumbles. Stir in seasonings.

          2. Transfer to a 4-qt. slow cooker. Stir in beans, tomatoes, corn, enchilada sauce, green onions and cilantro. Cook, covered, on low 4-6 hours or until heated through.

          3. In a small bowl, combine muffin mix and eggs; spoon over chicken mixture. Cook, covered, on low 1 to 1-1/2 hours longer or until a toothpick inserted in corn bread layer comes out clean.

          4. Sprinkle with cheese; let stand, covered, 5 minutes. If desired, serve with toppings

          This can also be done on the stove. But in the oven, for the muffin mix, mix it according to package directions. If you're using a large 13x9 pan, it could take more than one package to top completely. Just brown the meat in the skillet, add all the other ingredients, and then put it into a casserole pan, top with the cornbread mixture, and bake it on 350-375 until it's done.

            Ooh, this sounds so yummy and easy, Emily. To make it gluten free, I just need to use a package of gf corn muffin mix. Can't wait to try it!

              it was way easy HG. I used a hot enchilada sauce (La Victoria) and it was spicy but not too hot. But you could use whatever strength you like. This was the first time I tried it and it was really yummy I also think it would be way easy to make vegetarian too...It would be good with just diff kinds of beans. Like one can black, one red, and one kidney or something. The flavors are very similar to the tortilla soup recipe..but it was nice to have it in the casserole form

              Oh..I also used a package of frozen corn, just because I like it better..but either would work.

                            Ooooh I had the best Italian today- opposite Harrods in London.

                            Mmmmm pricey- but worth it. Family recipe- sure they weren't going to share!
